Shelf Life:

Once picked, avocados ripen in one to two weeks (depending on the cultivar) at room temperature, or can be stored refrigerated for up to a week. Optimum storage temperatures for ‘Hass’ are 41 to 44.5°F (5 to 7°C) for early season fruit and 40 to 42°F (4 to 5.5°C) for late season fruit.

Common Industry Practice:

Avocados must be mature to ripen properly and generally, the fruit is hand-picked at maturity.
